Ingredients:
4 medium potatoes cleaned and cut into large chunks
2 pounds parsnips, cleaned and cut into large chunks
2 pounds carrots peeled and cut into 2” chunks
1 large onion cut into wedges and separated
2/3 cup olive oil
12 Tablespoons Shirley J All Purpose Seasoning mix
Directions:
Preheat oven to 425 degrees. Combine oil and seasoning mix and toss with vegetable mixture. Place on roasting pan and bake for 35-40 minutes or until veggies are tender.
