Shirley J Recipe: Porcupine Meatballs

Ingredients:

2 pounds ground beef
4 Tablespoons Shirley J All Purpose Seasoning mix
2 eggs
1/3 cup ketchup
1/3 cup water
3/4 cup dry bread crumbs
½ cup shredded carrots
2 Tablespoons Worcestershire sauce

Directions:

Prepare meatloaf as described above but add 2/3 cup uncooked long grain white rice to mixture, mix well. Portion into meatballs of desired size by rolling in hands or scooping with ice cream scoop directly onto baking sheet. Bake uncovered in 350 degree oven for 25-40 minutes (depending on size) until cooked thoroughly.

Serve with Mushroom sauce (see cream sauce recipes), or pasta sauce (see pizza/pasta spice mix recipes).
